Adobe Captions - How to change colors AWAY from the shaded Gradients

When Captivate generates text captions during a software simulation, they are always shaded in a gradient.

I want to choose my own background colors.

Yet, I  see nothing in the "Caption type" drop down to allow for a different background color, or inputting desired RGB numbers to create a custom color for the caption background.

    That's because the default Caption objects are NOT shapes that you can change Fill and Stroke.  They are actually a collection of images that are fixed in appearance.

    However you DO have the option of using Smart Shapes as simulation captions as long as you select this Preference option BEFORE you start capturing.

    It is indeed bit confusing, because the default option in Preferences that is set to show shapes instead of captions for normal feedback messages, is not automatically applied to captions in a software simulation. Rod offered you a screenshot which shows that the default option for those feedback messages in captures is normally not checked. Lack of consistency, but that is my personal opinion.

    As for colors, I dare to recommend reading this article about the use of a custom  theme color palette. During many consultancy jobs I learned that most developers are unaware of this possibility. When working for a client I always start the editing of a custom theme by creating such a theme color palette:
