No internet, applications don't work and shut down. Grrr!

I have a place in the mountains that I like to visit when I can. While I'm there, I like to take the time away from everything and work on projects. The problem is, because there is no internet, when I try opening an application (like Illustrator for example) it looks for an internet connection. Not finding one, the application shuts down, leaving me a bit on the frustrated side. I'm paying plenty to have my suite of applications at my disposal, but if I have to have an internet connection every time I want to use them (especially since I mainly use three or four of them most of the time), then suddenly this creates a major issue. Is there a way around this or is this just too bad for anyone without a connection?
