Eps file image turns yellow when re opening inillustrator?

I have a big problem when I create artwork in Illustrator for printing on our roland I need to save as eps but when I need to make alterations I re open in Illustrator and the image is then yellow and not like it is supposed to look. How do I fix this please?
You will also see the logo down the bottom is not right either. see the png file for how it should look.

Hi, are you making this in illustrator if all is created in Ai then it should not show the yellow share file here so we can tell you..regards
