Help with Filling in Logo & Rotating Text

Hello,

 

I am a beginner with Illustrator but I have managed to make a logo that is almost exactly what I want using a lot of youtube videos and an Adobe stock image that I was able to redesign. I have had several struggles with this project but one of the main issues I'm having right now is filling in the areas of the legs that I realized were actually transparent once I uploaded the file elsewhere. I designed it on a white background so I didn't realize there were holes. Here is the whole logo, and you can see in the close up there are areas in the legs that are transparent that I'd like to be white. 

 

I also am trying to figure out how to rotate the text so it is centered inside the arc box. It's at about the right degree of arc, I just need the end where it says equine to be a little bit higher up.

To fill those areas you could try Live Paint.

For the text - It's a path text, right? You could see that you grab that path and adjust the anchor point and handles until it fits.
