Illustrator suddenly freezes and stop working midway.

My Illustrator is up-to-date but still it freezes in middle of my work and I loose my work, sometimes the file doesn't recover and I ultimately have to force quit and restart and it doesn't send report to Adobe.

Later, when I reopen Illustrator it open in "Essential" Workspace, even if I have set the "Essential Classic" and I believe it resets everything because it shows nothing it "open recent"option.

Does anybody know any solution for this? kindly help.
