Is there a reason why Illustrator menu has gone white?

I just downloaded a new version of the app (v28.1) as well as the other Adobe apps, the rest are all looking as they normally do in a dark mode (see pic), but for whatever reason Illustrator is completely white-out, I don't understand why, can any one help me?

Open the Preferences dialog box (keyboard shortcut is Ctrl+K). Click on the "User Interface" listing. You'll see options for coloring the interface in four different shades between dark to light.
