Hi everyone, I'm not familiar with Illustrator. I would like to modify the writing of this logo from “Burghy” to “Paninari” keeping the same font.

What am I supposed to do?

The font is outlined. You have to identify it, then start from scratch. Type the text and apply the fills and strokes. The shadow is just an offset copy.
