How to import properly? Modifying current settings

I recently discovered a good practice of importing SD card photos into date-labeled folders with Capture, Output, and PSD subfolders. However, the method that I originally started doing created a folder named "2023" in my iMac home (~) drive. I don't prefer this. I would rather import my folders to the /Users/ethan/Pictures/ folder (~/Pictures). I moved my prior import folders to ~/Pictures without thinking about it too much. I started a new project on Lightroom with newly imported photos, and I recognized that my prior import folders listed under "2023" were missing. I freaked out thinking Lightroom deleted my files for a while, but I realized it was just that I moved the folders elsewhere. I right-clicked on the missing files and located them on my PC. I can now access them in Lightroom, but the organization is not very good. I have a folder called "2023" with my project named "2023-10-22" inside, which is located in ~/2023 (not what I prefer). I have all my other folders listed too, but they are not shown under "2023" but listed as the project folders themselves, and they are located in ~/Pictures/2023. This is a little hard to explain, I have attached a photo to this post to show you what I mean. How can I fix this organizational thing in Lightroom and make it so that future imports go to the ~/Pictures/2023 folder, not ~/2023? Thank you.
