Adobe DNG Converter 16.2 deletes maker specific metadata when converting Canon .CR3 files

When using DNG converter 16.2 to convert Canon EOS R5 raw .CR3 files, I noticed that the maker specific metadata (displayed by Exiftool under maker as Canon) appears to be deleted.  This problem appears to be unique to the conversion of .CR3 raw files.  Using DNG converter 16.2 to convert Canon EOS 5DSr raw .CR2 files does not result in deletion of the maker specific metadata.
