Adobe Edit Is Ruining My PDF Documents

I understand that there is an Edit - Text option on each page to stop automatic editing. Unfortunately, the automatic editing starts and I have to repeatedly hit the escape button to stop the process. At times my font has already been changed to garbage before I can stop the process. There has to be an option in Adobe settings somewhere that will allow me to turn off Automatic OCR completely. Why is this a default option when it clearly causes a document to become unreadable? Someone please let me know the correct way to stop this from happening.
