Content Tagging

I would like to identify sections of text within a series of PDF documents with customize tags. Each Tag would have a small bit of meta data about the content between tags <Date / Topic / Author>. Then be able to search for these tags via SharePoint. Is there a way I can go this? I don't what to just edit the PHD with visible text.
