Editing text on a music notation PDF in Acrobat Pro without destroying the music?

I am a musician and have my music library in PDF files.  Whenever I try to edit the titles or text on these files the Acrobat Pro app tries to render everything into recognizable text including the "standard music notation" (notes and symbols on the staff).  It doesn't recognize notation fonts)  Almost every time it distorts and destroys the music beyond usability.  How can I edit the text on these files of my music without affecting(distorting) the standard notation (notes and staff)?

Probably a lost cause. Consider using annotations instead of editing text.

If you have the original files, make your edits there and create new PDFs, if you don't, go to Tools> Edit PDF> Scanned Documents, do you see a check box for Recognize text? If so, try turning it off.

If that doesn't work, I would probably place the PDF into a new InDesign file, add any text edits there, then open the linked PDF and delete the unwanted type and export to a new PDF.
