Hi!
I cancelled my subscription on Creative Cloud 2 months ago which I've used for a year. Today I log in and saw the uptaded versions of apps are on my plan and give it a try and it opened. I can use Ps and Ai, open files and save it etc. I didn't got any payment warning. And in my account it still looks: "you cancelled the plan". I don't want to do something wrong or subscribe again. Why can I open the apps without payment?

What does your account information say? Does it show that you don't have any subscribed plans? Check the following link

Did you get any confirmation emails saying that your cancellation was successfull. If yes and no plan is shown then I think you are good. In the off case that you are again subscribed you shall have 14 days to cancel the plan with full refund. Alternatively you could also talk to the support to clear this out once for all. To contact support follow the instructions given below
1. Go to https://helpx.adobe.com/contact.html?rghtup=autoOpen
2. Wait a bit on the page that opens up, it should automatically open a chat popup. If that does not happen then look for a call out/chat icon at the bottom right, click over it and the chat popup should open
3. In order to talk to a human type "AGENT" in the chat box
4. If you are not able to get to the chat window, then disable your adblockers, firewall, enable cookies/scripts on your browser. If it still fails then change your browser/machine/network.

Yes, as I said it says "You cancelled this plan" Also I got the cancelation mail. But when I go this link: https://creativecloud.adobe.com/cc/?locale=en It says "your plan is CC all apps" (I add the screen shots) Also there is no payment drawn from my credit card for last two months.
But again I can use the updated apps without a problem.

you should contact adobe support. there are 3 ways to contact adobe; chat, phone and twitter:
chat:
use a browser that allows popups and cookies, and click here, https://helpx.adobe.com/contact.html?rghtup=autoOpen
in the chat field (lower right), type AGENT
be patient, it can take quite a while to reach a human.

p.s. if you're contacted by anyone (via email or private message), it's much more likely to be a scammer than an adobe representative. ie, double check for an employee badge if contacted in the forums and look for an adobe.com domain in the email address if you click reply to an email. then check again and be very suspicious. any other method of contacting (or offering to contact you) is almost certainly a scam, https://community.adobe.com/t5/using-the-community-discussions/staying-safe-in-the-adobe-support-com...

In my cancelation mail it says "Free memberships include access to Creative Cloud services and 2GB of free internet storage." So I think thats why I can open the apps but it is limited somehow. (I didn't see it yet)

that's not correct. free services do not include the ability to open any cc subscription app (eg, ps and ai). it does include https://helpx.adobe.com/creative-cloud/help/benefits-creative-cloud-free-membership.html

Contact Adobe as others have suggested.
You may have started a new trial and may be billed if not properly canceled.

Another strange thing in this is that afaik trial subscription for the same app does not work more than once on the same computer, unless the computer has been formatted and OS reinstalled again. So if you are using the same computer that you used during the time you had the subscription and these same apps were the ones you were using earlier also, I think this is a grey area that you might have landed into. The safest bet is to confirm from support to verify that you are not subscribed and are not going to be charged, save the transcript of the chat and then be assured
