My company is paying for photoshop, ever since an employee has made an account. That employee has quit 2 years ago, now I need his, or new login data.
All I have to confirm my identity though, is a credit card transaction slip from my company to Adobe.
Is there any chance to retrieve the data or at least delete the account?

A personal account is completely personal, non transferable and has no connection to the employer. Adobe won't talk to you because you aren't the account holder; the payer doesn't count, it seems. You may need to get the transactions blocked. This is why businesses really aren't advised to use personal subscription plans, rather using Teams or Enterprise plans; otherwise subscriptions become a nice gift to parting employees.
