Simply question, what happens after my annual subscription expires, does this mean that I won't be able to use adobe products or get updates. How do these subscriptions work?

Adobe automatically rolls the subscription over unless you cancel it and will continue to charge you. 

If you cancel the subscription, you retain your files but the programs will no longer work.
