Every time I close Adobe Acrobat Pro (paying for a full license subscription) it resets all preferences to default. It literally signs me out of my account and resets all the preferences. When I open the program it's as if I've never used it and it signs me in to my account and everything is back to default.

That looks like an OS problem. Is your computer a managed system by your IT?

IT looked at it and said it's an Adobe issue.

Hope you are doing well and sorry for the delay.
What is the version of the Acrobat DC you are using? To check the version go to Help > About Acrobat and make sure you have the recent version 24.01.20604 installed. Go to Help > Check for updates and reboot the computer once.
Also try to repair the installation from the help menu (Win Only) and see if that works.
If it still doesn't work, please remove the application using the Acrobat cleaner tool https://www.adobe.com/devnet-docs/acrobatetk/tools/Labs/cleaner.html , reboot the computer and reinstall the application using the direct link https://helpx.adobe.com/acrobat/kb/acrobat-dc-downloads.html

I unistalled and did a clean install from the web portal. I tried to do the update from within Adobe and it fails and I've tried to do the update and patch from the portal and it fails.
I do not know what else to do??
