Why does Adobe completely redsign Acrobat's GUI every few years? The only effect it has on me is to slow down production. Now, instead of getting on with my work, I have to spend time looking for things and thinking about the interface. Like figuring out what's behind the rich tool tip (or whatever it is) that just popped up, hiding important content. Or figuring out how to turn off these things off in the preferences which are equally confusing. And wondering why you just decided to swap the positions of the pages and tools. And so on. A complete waste of my time. One of the basic tenets of UI design is "Don't make me think", but it seems the Adobe has gone out of its way to do just that.
I shan't swear, because I'll get into trouble for doing so...but that's how frustrated I feel right now.
I already know what you're going to say in response, so don't bother responding, Adobe person. This is a rhetorical whine!
Also, if this product wasn't included in my subscription, I would not buy it. I'd look at alternatives. Seriously. I might just do that anyway. I mean, if I'm going to invest my time in learning a new inteface, I might as well do so with a product from a company who doesn't jerk its customers around with impunity.

You're barking up the wrong tree... We're fellow users here, for the most part, and many of us agree with you on this.
Luckily, you can go back to how it was before. Click the Options button at the top left corner (Windows) or open the View menu (Mac) and select Disable New Acrobat.

We acknowledge that the new Acrobat represents a notable change. However, we hope that as you get familiar with the new interface, you can be more productive & get more out of Acrobat.
