I'm seeing this on a Windows PC. Tried repair install, tried all my monitors and the laptop monitor (so, spanning embedded and dedicated video card), and via native laptop monitor, USB connected dock monitors, and MDP-connected monitors.
So Frustrating!!!

I should also note that I tried rebooting, and tried Menu, Help, Repair Installation. No effect.

Sorry for the delayed response and troubled experience.
Ensure your copy of Acrobat is updated, to check for updates, launch Acrobat > Help > Check for Updates.
Also, it would be helpful if you could share the files with us that are showing this behavior.
In the meantime, try tweaking preferences here: Launch Acrobat Cmd or Ctrl + K > Preferences > Page Display > Rendering—Smooth text, etc. Each time you change a preference, click OK and then try PDF again.

I think deactivating Dark Mode fixed this for me.
