Adobe Acrobat Pro DC 2015 release - Text coming in as an image

I have been using Adobe Acrobat Pro DC 2015 release for several years now. Recently, when saving a file as a PDF, text has been coming in as an image which is preventing me from editing the text. I have tried to troubleshoot on my own but with no success. Any suggestions?
