Adobe Acrobat Pro DC Forms

Hello!    I created a form that has two editable fields for people that will recieve and can enter their information.  However, when I've sent this to various people to test, they can still edit the form body of text of the document.  Is there a way to lock down the form to prevent the text from being edited, but still allow for them to fill in the fields?

I've tried many things using the guides to no avail.

You can apply a security policy that prevents editing, but allows filling form fields, via File - Properties - Security.
