This might be more of an Adobe PostScript or Acrobat Distiller Error or Microsoft Office translation to PDF (or a mixture of both), but before I dive in, here are my software details.
When selecting Adobe PDF as a printer in Excel, I have some fonts (both .OTF and .TTF) that are installed in the C:\Windows\Fonts folder (which Adobe Distiller confirms the correct filepath). However, when attempting to print to Adobe PDF printer, it replaces all fonts with Courier.
The second attempt to use Adobe PDF printer, is going to preferences and unchecking "Rely on system fonts only; do not use document fonts" , but then I get an error

Now, some would say "Just use Save as Adobe PDF" (Acrobat PDFMaker)... there's a slight tradeoff... it perfectly renders the fonts, but if I use any decorative borders or shading, it significantly reduces the quality (also ignores border thinness and dash dotted lines just get meshed).

Is this an issue with a particular PDF file or with all the PDFs? Please try with a different PDF file and check. If the file is stored on a shared network/drive please download it to your computer locally and then try again.
What is the version of the OS and the Acrobat DC you are using? To check the version go to Help > About Acrobat and make sure you have the recent version 24.02.20857 installed. Go to Help > Check for updates and reboot the computer once.
Also share the screenshot of the error message for more clarity.
