Is there any resources / tutorials with all the basisc and the more complicated stuff for Adobe Experience Manager Forms.

One key thing you should know, and which the tutorials won't tell you, is that AEM forms are obsolete for many purposes, because almost no apps will handle them. There are no apps at all for iPhone or other mobile devices, so if your plan is to distribute the forms to customers/students/citizens etc. you open a world of pain. The forms may be fine in a highly controlled corporate environment, or if you don't distribute the forms but instead use the Adobe Forms Server to dynamically convert to HTML5.
