Hi,
I've a simple document containing few text lines and an jpeg image.
When I open with adobe acrobat 2017 I see image as a black rectangle, while I see the image correctly if I open the file with other programs

Go to Edit (or the Acrobat menu if you're on a Mac) - Preferences - Page Display and tick "Show large images".

I've tried this configuration, but again I can't see image: i see only a black rectangle instead of image.
Using browsers (Chrome or Firefox) I can see the image

Can you share the actual file with us?
You can attach it to the original message using the tiny paperclip icon at the bottom when you edit it, or upload it to a file-sharing website (like Dropbox, Google Drive, Adobe Cloud, etc.), generate a share link and then post it here.

Although some applications can show it, the file itself is corrupt. One way to solve it is to re-create it. For example, open it in Google Docs and then download it as a PDF file. That will generate a new file which you should be able to open in Acrobat.

Cause I generate the file through an application written by me (using the itext library), I would like to understand what is the cause (if is it possible to know) for which the pdf file is corrupt

That will require a more in-depth examination of the PDF. I suggest you report this issue to the iText developers.
