I have multiple forms I need a customer to fill out, and each has approx 12 icons, of which only a few may be applicable to that form. Is it possible for my customer (using Acrobat Reader) could delete or hide the icons not relevant to that form?

Yes, but do you want them to be able to make them visible once more, after they were removed?

If so, you could do it in a number of ways, such as putting two button fields one on top of another for each image, one with the image and another one without it, and have them toggle each other's display property when clicked.
