I am in adobe enterprise plan.
I wonder
1) if my administrator have the access to my files (either local or on adobe cloud)
2) if my administrator can see my activities (ie when I launch which app and view/edit which files)

Administrators can generally access your local files only if they have direct access to your computer. Access to files stored in Adobe Cloud depends on your organization's permissions. They can see some activities, like when you log in and out of Adobe services, through audit logs. However, they usually cannot see which PDFs you are viewing or editing. Could you please share the Adobe product you are using under the enterprise plan? Please find the answers to your question below:
1) if my administrator have access to my files (either local or on adobe cloud)
- We will need the Adobe service you are using under this plan. Then we will be able to provide the correct information.
2) if my administrator can see my activities (ie when I launch which app and view/edit which files)
- The Adobe account admin may not have information about the app-related information.

Update please? Can IT admins see what PDFs we're viewing/editing??
I can't have my IT guy having access to my legal documents on PDF. Please verify.
