Can you control where the text boxes go when using Edit tool?

I am trying to edit some scanned in documnets to correct a typo on each page. When Acrobat "scans" the page to make the text boxes, on some pages it groups the text how it seems its would logically be grouped, other times it creates very large text boxes the cut through lines and text. When I try to edit even a single character in these enlarged selections, it throughs the placement of everything off and it seems not amount of adjusting the textbox size seems to realign things properly. Is there a way set it to "scan" only a select part of the page, or re-scan, or anything of that nature? I have attached two screen grabs that show what i mean. Thanks for any suggestions.
