Adobe Acrobat Reader DC works OK, but Adobe Acrobat Pro DC (latest version) has the following problems:
1. When copying text containing non-ASCII characteres, it is pasted with empty spaces in place of the non-ASCII characters.
2. Cannot sign PDF document with certificate:
Adobe Acrobat Error encountered while signing
Error encountered while signing
The credential selected for signing is invalid
As said, no problem with Reader, but only with Pro.
System: macOS 11.4 (20F71) Big Sur.

What happens if you uninstall both Adobe Reader DC and Adobe Acrobat Pro, and then reinstall Acrobat Pro DC without Adobe Reader?

Thanks. Both issues remain. I must say that both issues arose at some time (no problem with older versions).
Other two issues of Adobe Acrobat Pro DC and Adobe Reader DC for Mac are the following. If you open a PDF file and edit it somehow (for instance, highlighting text with the marker) and then:
3. Change the name of the PDF file in the Finder and try to save it, you get an error. Such actions are useful for instance when downloading a scientific paper (PDF), opening it, highlighting some keywords or sentences inside and then changing the name of the PDF file accordingly in the Finder.
4. Move the PDF file to other folder in the Finder and then try to save it, an error is also generated. Again, these actions are useful when you are editing a PDF file and want to move it elsewhere before continuing editing it and eventually saving it.
5. Yet other issue is that if you open PDF files with Adobe Acrobat Pro DC or Adobe Acrobat Reader DC, such files show in the Home - Recennt window, which is great. But double-clicking them to open them generates an error if you moved the files to other folder in the Finder since last time that you opened or saved them.
Other applications like Microsoft Word work fine in all such scenarios with Word files. It would be great of Adobe Acrobat Pro DC and Adobe Acrobat Reader DC worked as well in such scenarios. These are important productivity features. I have reported them many times to no avail. Is Adobe listening? Thanks!

I am wondering if this has anything to do with the "Security (Enhanced)" sandboxing preferences.
Maybe disabling "Protected Mode at Startup"?

Thanks. I have tested the five issue above disabling the following to no avail; all issues remain:
Adobe "Acrobat Pro DC - Preferences - Security (Enhanced) - Enhanced Security - Enable Enhanced Security".
BTW, Adobe Reader DC has that activated by default, as Adobe Acrobat Pro DC.

Update (more serious productivity issues that have been unfixed for many years now):
6. Other issue of Adobe Acrobat Pro DC is that if you Command F to search and then try to manually scroll vertically, it behaves in an unexpected way: it is excruciatingly slow and does not stop when you stop manually scrolling. It has life by itseld behaving like a zombie! Really frustrating. Yet, applications like Microsoft Word work smoothly in such scenario.
7. Additionally, Command F to search does not work by default as you would expect and as virtually all other applications work, like Safari or Word on Mac. For instance, searching for gene does not find general even when "whole words only" is not selected. And searching for ñ finds n instead. Yet, they are different characters! In other words, it does not properly search non-ASCII characters and mixes ASCII and non-ASCII hits after searching. Again, really frustrating. Again, check out "Edit - Find - Replace" in applications like Microsoft Word for a great implementation.
It would be fantastic if all these serious productivity issues are fixed. Thanks!

Update: one issue fixed (when copying text containing non-ASCII characteres, it is pasted OK now).
But the other issues persist with Acrobat DC Pro (Continuous Track) 2021.005.20058 on macOS 11.5.1 (20G80) Big Sur.

8. It would be also useful if both Adobe Acrobat Reader DC and Adobe Acrobat Pro DC allowed to configure the "View - Zoom", for instance as "Fit Width" for all newly open PDF files now and in the future, until the setting is changed. Now it is not possible, and virtually all PDF files open with a smaller area, without such "Fit Width" setting, requiring manually making such width zoom, which is specially useful in large monitors, which are standard now. The is an important productivity issue.

Except the signature with certificate that has been fixed with Acrobat DC Pro (Continuous Track) 2021.007.20091 for Mac, the other issues remain. So, I have switched to PDF Expert (which does not have such issues) until Adobe Acrobat Pro DC fixes these serious productivity issues.
