Hope you are doing well and sorry for the trouble. As described you can not turn stamp into an updated date stamp.

- Would you mind sharing the workflow/steps you are doing to create a date stamp?

- Do you get any error message? If yes, please share the screenshot of the same for a better understanding?

Also, please follow the steps to create a custom stamp with automatic date using Acrobat DC, shared in the help page - https://helpx.adobe.com/acrobat/kb/create-custom-dynamicstamp.html and see if that works for you.
