Hello, community,
"I have to send my payroll, which is a PDF signed with a digital certificate, but it contains a lot of confidential data. How can I apply censorship to the PDF?"

What you want to do is to "redact" the document. However, given that the original document is signed, you very likley cannot make modifications to this document. This means that your only option may be to print the document, redact it by covering up the information you do not want to share and to then scan the modiifed document. Depending on what software you have available, some of all of these steps may be possible to do in software without acutally printing or scanning the document.

I will redact the payrolls and send them without a valid signature.

You can't do it and keep the digital signature. If you want to redact parts of the file it has to be done before you sign it.

It is not me who signs the document, but my employer. Otherwise, it would be very easy 😉
