I need for professional printing and cannot find such an option in Acrobat: changing texts from RGB 0/0/0 to CMYK 0/0/0/100 and changing outlines to fills. Perhaps someone knows how to do this?

In Acrobat Pro, you can do that with a preflight rule.

If you do not have Acrobat Pro, you can't do that in Acrobat. Sometimes PDF creation allows for doing that by changing the black value to true black.
