Choose font when converting scanned page to editable text

I have a form that was originally created using Times New Roman font. It was saved as a scanned image. I am able to convert to editable text with Acrobat. Problem is it changes the font to *Minion Pro-10176. Is there a way to designate which font is chosen by Acrobat when converting?

Thanks for sharing the suggestion. There's no such options as of now and it gets auto chosen basis similar glyphs. Please let me know, while you continue editing the same text using Minion Pro-10176 (custom created font), do you see considerable difference and if they do not align with your existing font. (if we ignore the naming of the font for now)?
