I have Adobe Acrobat XI (version 11.0.16) on my computer, and it converts PDFs to MS Word format very well with mostly normal formatting - some unnecessary line breaks, but otherwise pretty good.
My colleagues have Adobe Acrobat Pro DC (version 2018.011.20038) and when they convert PDFs to MS Word, the Word file is full of text boxes and it is a mess to work with. Is there a way for them to change their settings to that the converted MS Word files do not contain a ton of text boxes, but instead have flowing text like a normal Word file has?
Alternatively, is there a way to install an older version of Acrobat on their computers which would work like Adobe Acrobat XI (version 11.0.16)?

Sorry for the delayed response and inconvenience caused. As per the description above, when converting PFDs to MS Word file using Acrobat Pro DC version 2018.011.20038, the Word file is full of text boxes, is that correct?
Please try resetting the Acrobat preferences once and reboot the machine, to reset the preferences, refer to How to reset Acrobat Preference settings to default. and see if this brings any difference.
Also, repair the Microsoft Word from Control Panel>Programs and Feature>Highlight Word and Choose to Repair, reboot the machine after repairing word.
Make sure that you have installed all the updates related to the Operating System and Microsoft Word.
Navigate to Acrobat's Preferences from Edit>Preferences>Converting From PDF>Word Document>Edit Settings>Make sure Recognize Text if needed is checked.
Is it specific to one PDF or with all the PDF files? If it is specific to one PDF, Is it possible to share the PDF file with us? To share the file, please use Adobe Send feature, upload the file, share the link to files via private message only, How Do I Send Private Message
Note: Acrobat 11 is already declared as an end of support product, End of Support means that Adobe no longer provides technical support or distributes runtimes. This policy affects product and security updates for all derivatives of a product or product version (localized versions, minor upgrades, operating systems, dot and double-dot releases, and connector products).

Hence, it is not advisable to install an older version of Acrobat on the machine.
