I have created a fillable PDF job application for my business. I have chosen the "Date field" option, but these fields are still showing up and behaving like "Text" fields instead of "Date" fields throughout the form. When I send the form to someone to practice filling it out, all "Date" fields simply have you type text, instead of showing the pop-up calendar that should appear.

My first question is, if you're using Adobe Acrobat Pro DC latest version update 2020.012.20043?
My second inquiry, Is this even happening in your Adobe Acrobat Pro DC while working and editing these fields, or, does it happen only when the form is sent to someone and that other person opens up the PDF in another PDF viewer?
I'm asking this because if this is happening only when you send this PDF to somebody else, you need to confirm witht that user in which PDF viewer they're opening your PDF with.
. It may be possible that the user is using a web browser, for example. In which case, such web browser with PDF viewing capabilities are known for subpar PDF rendering, and may not respect the formatting of such form fields with custom date format(s).
If this is happening with Adobe Acrobat Pro DC or with Adobe Reader DC in both your computer and the other user's computer, then you may need to click on Help--->> and Repair Installation and see if the problem persists.

Thank you. This helped me - "Help--->> and Repair Installation" to fix problem in my Adobe Acrobat DC.
But what about other users? Unfortunately, they can`t use this form.

The calendar widget only appears in the latest versions of Acrobat/Reader. If the user has an older version it will function like a text field, but will only accept values entered in the specified format.

it will be the same problem with formated text fields, and dropdown list?

No, those should work fine in pretty much any version of Acrobat or Reader. Not necessarily in other applications, though!
