i am new to Adobe acrobat pro and i am having a hard time diffrenciating between enhancing a scanned document and just using recognize text only... My aim is to have a searchable file without losing any quality in the document images. also, to be able to accuratly copy text from Adobe to other program

If you visit the scan/OCR settings, you'll find three options as shown below:
The middle one, Searchable Image (Exact) will leave the scanned text alone (visually), and will still be searchable. Play with these settings to see which works best for your needs. The results can be pretty amazing, and surprising with some experimentation.
