Hope you are doing well and sorry for the trouble.
Are you experiencing any trouble while signing the PDFs or getting any error message? If yes, please share the screenshot of the same for a better understanding.
What is the version of the aAcrobat Pro youare using? To check the version go to Help > About Acrobat. Also make sure you have the application updated to version 21.05.20048 Go to Help > Check for Updates and reboot the compter once.
You would be able to sign the PDFs unless the document is not locked for editing or has some kind of restrictions added to it. Yes, if they can be signed in general.
The Educational "version" of the application is exactly the same as the regular one, it's just a different license type.

I keep getting an authentication error when I enter an email in to request a signature. Signature requesting is included on the Teachers and Student version?

Would you mind sharing the screenshot of the error message for a better understanding? Also, check if this is an issue with a particular PDF file or with all the PDFs and make sure you have the application updated to the recent version 22.3.20258 or 22.3.20263 (Optional Windows update) from the help menu > check for updates and reboot the computer.
