Just installed adobe acrobat 2020. Tried to scan a document. Scanning preview worked but when I scanned the application shut down and no scans stored in the clud or on my PC. HELP!

Hope you are doing well, and sorry to hear that.
Would you mind sharing the version of the Acrobat Pro 2020 you are using? To check the version, goto Help > About Acrobat and make sure you have the recent version 20.05.30418. Go to Help > Check for updates and reboot the computer once.
Are you on Windows or Mac OS and what is its version? Please check for any missing/pending updates and try updating it.

You may also try to create a new test user profile with full admin rights in Win or enable the root account in MAC and try using the application there and check.

Tried your suggestion which made no difference. Uninstalled Acrobat and reinstalled but it still exits acrobat when I try to scan.

Have you tried using the application in the new user profile or root account, as suggested earlier?
Please collect the Adobe CC logs https://helpx.adobe.com/creative-cloud/kb/cc-log-collector.html , Procmon logs (Win) https://www.adobe.com/devnet-docs/acrobatetk/tools/Labs/acromonitor.html and share them via document cloud link https://helpx.adobe.com/document-cloud/help/sharing-pdfs.html for further investigation.
