When making substantial edits to a large text, how do you keep a text from disappearing if the added text had to go on to the next page. Editing works fine if it all takes place within the boundary of one page, but if I add new text that goes on to the next page, it only works to the bottom of the page, and then anything further that I type simply disappears.

Editing a PDF was only designed to be used for smallish edits, not substantial ones. You really should make the edits in your original source document,not the PDF. There’s nothing you can do about text overflow except to make the text smaller so that more of it fits on the page.
