@elouise_8816 this will sound silly, but did you select the file to open? for example, if you have nothing to open, if you click on 'Edit PDF' it will ask you to select a file:
As soon as you do that, the file will be ready to be 'edit' mode and ready to make changes
So, where did you install this? From Adobe website or Creative Cloud app or a thid party website? Because that looks like it corrupted. I would do a clean install, but use Adobe Cleaner to make sure that all the corrupt files and installations are removed. Only use Adobe Cleaner from Adobe.
Once done, go back to adobe.com, and log in as you would, and install Acrobat again

We are glad that it worked for you.
Just going by the description, it looks like a corruption of the preference files, which was conflicting with the other application files, leading to blank menu screens. Cleaning and re-installing the work fixed this corruption issue.
