Editing Adobe PDF changes font to system default

When I open a PDF and click "edit," some fonts change to default; I found a fix for this:

I click the gear under "recognize scanned text," click "more settings," and un-check "use available system font," but I have to do this for every document. My question is how to set this so it is set this way by default. Is there a global setting for this? I haven't found one yet.
