I would like to find a script so that the answers of my pdf form are sent by email in text format
in the body of the email. I found an old generator which is perfect and does what I want but it
seems to have a character limit and my form is very big. Do you have a solution ?

Let me move this to the Acrobat forum for you, which is the appropriate forum for your question.
The Using the Community forum is for help in using the Adobe Support Community forums, not for help with specific programs, installation issues, or account issues such as subscription questions or billing problems, or generalized questions about Creative Cloud services.

It's here.
How are the fields named?
Do you want to export the value of all the fields or only a part?

You can do it using the mailDoc command, but the original PDF will be attached to the email.
If you don't want that (and you want it to work in Reader) the method described in that email is the only one available to you, including the character limit.
