I need to change the default email that the forms are sent from but the Email Settings tab isn't in the Preferences. Any idea why it wouldn't be showing up for me?

Look under Identity in the box to the right. It's what is used as the default when you use the Distribute Form feature.

Adobe acrobat pro. I believe it's cs5? I am using a PC. Is that the information you need? I'm very new to all of this

Go to Help - About Adobe Acrobat. What exact version number is mentioned there?
Then post a screenshot (using the Insert Image icon, not by attaching it to a reply by email) of what you see under the Preferences dialog.

OK, this setting was introduced much later, probably in version 11, if I remember correctly.

Okay. Is there any way for me to change the default email that the forms are sent from and automatically sent back to? I was prompted to enter the information the first time I created a form but I entered the wrong email address. So now one of my coworkers receives an email everytime someone fills out the forms.

You want to change the address the file is sent to? That's usually a property of the Submit button in the file itself, not a local setting.
