Font grayed out in Acrobat Pro DC

Hi. Trying to edit a .pdf. The font used in the text box I am trying to edit is grayed out. If I click in the text, the appropriate font shows at the top of Format. As soon as I try to edit, it switches to a different font, and the font I need is grayed out. There are no available updates. I have Version 2021.007.20099, and am working in macOS Big Sur V. 11.6. It looks like years ago there were all sorts of updates and fixes for this but I can't find anything recent. Help please!
