I am wanting to create a form where there are check boxes, and based on whichever box to tick a corresponding addition to the initial form will "pop up."
Example: there are three options beneath some info previously filled out, it is currently a one page document, but then you click on one of the options and the form expands to show more of the form that needs to be filled corresponding to the selection.
Is this a thing in Adobe Acrobat?

It's possible, but very complicated. What you can do is create those elements in advance, hide them and then show them when needed. When they are hidden, though, there will be a white space on the page, unless your entire document is constructed out of elements that can be moved around, like fields or comments.
