I was able to create a "sign template" but it does not allow me to customize by message template.

Hi Erinu,
I have checked the email address that you used to login to the Forums.
I see that you subscribed to the Adobe Acrobat DC for teams which include the individual account for Adobe Sign.
The settings to create a custom message template is only available in the business and enterprise account.
However, you can edit the message on the Send page in Adobe Sign.
