Are you trying to convert an Excel file to a PDF, or PDF to Excel?

Corey,

You'll have the most flexibility if you use the  PDF Maker (Acrobat Ribbon) in Excel.   There's a  Preferences button that will allow you to control the conversion.

Using Excel's Save as PDF command isn't nearly as controllable.
