I Have Acrobat DC and need to change my signature to blue ink. How do I do that using this program?

Sorry to say but text color in Fill & Sign is only available in Black & White. Refer to the following forum threads which discuss more:

It's pretty easy to overlook, but prior to making the signature in the "sign yourself" box, select "change color." Select desired color and here's the sneaky part, there's a small box that you need to check below all the colors. "Keep signatures black." It is located in the pop up box of selectable colors at the bottom. Small font, very easy to miss. Then create signature in "sign yourself" or "fill and sign." Should work. Hope this helps. Was driving me crazy too.

I was about to say that your solution didn't work for me, but fiddled for a while and discovered why. At least in my case, the text color button doesn't appear initially or if I select the "fountain pen" box, as shown below.
However, if I select the "A" surrounded by a dashed box, it does.
At this point, I can open the popup and, just as you said, there's the little check.
I'm not 100% sure, but I think I had to delete and reload my signature to get this to work. In any case, if someone starts from scratch and follows these steps, they should be fine. Now, it seems that even in subsequent sessions (again, haven't thoroughly tested, but at least when I close and reload the app) my signature stays blue.
I'm working with 2024.003.20054.
