How do I turn off the page thumbnails off by default every time a file opens

Does anyone happen to know how to change preferences so the page thumbnails left sidebar does not appear by default when opening files? Tks.

There's no system-wide setting for that. It's up to each file you open whether to show this panel or not.

However, if you select the option to restore the last view setting when re-opening files (under Edit - Preferences - Documents), I believe the panel will remain closed after the first time you open the file and close the panel manually.
