The Adobe updater hangs when it executes. I understand this is a legacy server problem. It seems I have to upgrade to latest version of Acrobat pro, ie. not a subscription model?

As per the issue description mentioned, you want to upgrade from Acrobat 8 pro to the latest version of Acrobat, is that correct?
Upgrading from Acrobat 8 to Acrobat DC (the latest version is not available). You can buy subscription version of Acrobat DC or perpetual license ( one -time license) from Acrobat using following links:
