I've uploaded a document to Acrobat DC so that I can create an editable form within it. I want to be able to save it and come back later to work on it, but when I save it, it turns it into the PDF form for people to work in (what I want in my final outcome) but I can't go back and change/edit the editable version I'm working in, help!

Why not create the form in your desktop copy of Acrobat Pro DC and retain full control of it?
Why upload it to Adobe's servers and give them control?

What do you mean you can't change the Editable version? Do you mean that you want to change the page content of the document?
For this you need to use the replace pages feature in Acrobat.
The methodology for working with PDF files is that the content is created in a content creation app, such as Word, or InDesign, then the doc is converted to PDF. Acrobat is used to finish the document for distribution, by adding form fields and other features. If you need to change the page content, then you need to change the doc in the original format, convert it to PDF, then use Replace Pages to import the new content. This won't affect features like form fields.

After opening the PDF file with Acrobat Pro you must find the "Prepare form" tools pane to be able to edit form fields:

And if the Forms tool doesn't appear in your right-side panel, you can access it from the Tools tab in the upper LEFT (opposite side of the screen).
