Thanks in advance for any guidance! I've looked a bit in the community and not found a solution quite fitting my need, or, I don't know how to make the instructions work for my situation. I've also called, and was directed right back to the community.
I have a PDF document of about 1500 pages, and I seek a way to automate the following:
1) Go through pdf pages, and, for each page:
2) Find the date of service and the time (it needn't say the words, "Date of Service"), but be within a certain span of years (e.g., 2000 to 2020), and
2a) Highlight that date of service and time, and
2ai) if there are multiple instances of that date, highlight only the one latest in time;
2b) If there are multiple dates, highlight only the latest in time, of each;
3) Sort all the pages of the document in ascending chronological order based upon those highlighted dates-times.
The desired outcome would be that all the pages are grouped together by the date of service, and that date of service is highlighted on each page. There would be many pages for each date of service. And, if a page has multiple dates of service hightlighted, it would appear in the group for each of those dates of service (such that the total number of pages for the document would be greater after having performed the automation task(s)).
If there are any questions, or if my explanation of what I would like is unclear in any way, please let me know and I would be more than happy to try and clarify. Thank you so much for considering my problem! (I don't know programming, unfortunately)
PS. Information in document is sensitive, so cannot provide examples as attachments.

This is probably possible using a custom-made script, but it's not a trivial task at all. It might also not be possible to process such a large file in this way using only Acrobat. A stand-alone tool might be required.
If you're looking for a professional developer to create the whole thing for you, I'm happy to do it (for a fee, of course), but I'll need to see some sample pages first, to get a better understanding of the file's structure.
